Peppermint Aero Mountain Munchies: Flapjack recipe

Peppermint Aero Flapjack is a great combination of flavours.

Aero is abbreviated from aerated, on account of all the air bubbles found within the chocolate. This type of chocolate was first produced by Rowntrees in York, Yorkshire, and is now popular all over the world.

Ingredients:

Oats – 400g

Banana & Coconut Muesli - 200g

Non-salted butter – 250g

Brown sugar – 150g

Pure honey – 90g

Aero Chocolate – 100g

Method:

Weigh oats and muesli into a large mixing bowl

Melt and combine the butter, sugar and honey over a medium heat in a small saucepan

Stir occasionally until the mix bubbles and rises, and then remove from heat

Pour the wet mix into large mixing bowl

Stir well and allow to cool

Break the chocolate into the pre-defined chunks

Turn into a baking tray, pre-lined with greaseproof paper

Spread the mix for an equal cover

Evenly distribute the chocolate across the tray

Firm down the mixture with a small-holed potato masher

Bake in a preheated oven, for 15-20 minutes, or until golden brown

Remove from the oven and leave to cool/ harden completely before removing from tray and cutting

Prep time: 5 min

Bake time: 15-20 min

Oven temperature: 180°C / 356°F / Gas mark 4

Servings: 15

Note - you can also add the chocolate to the mixing bowl and stir everything together. In this way, the chocolate will melt and produce an all over peppermint flavour.
